Becca might not brag about it, but she had a really good idea for Thanksgiving this year. All the traditional food for Thanksgiving is so heavy that she decided to make something light and healthy. Borrowing a few ideas from another family member, Becca made a great fresh salad with spinach leaves, artichoke hearts, olives, red onions, oregano, sliced mushrooms, extra virgin olive oil, and balsamic vinegar. She marinated the vegetables together in the olive oil and balsamic vinegar overnight and then tossed them with the spinach for a quick, fresh dish. I love Thanksgiving food, but after all the yams and mashed potatoes and turkey and stuffing, it was great to have something light and fairly healthy. Plus, it made me less full, so I could eat more pie (7 slices). Kudos to Becca; she has good ideas.

Yes, thank you, thank you. I planned out my Thanksgiving feast well. Two slices of pumpkin, two slices of key lime, one slice of pecan, one slice of chocolate mouse, and one slice of cherry cheesecake.
